Pad Kee Mao - quick & easy

 

Satisfy your Thai street food cravings with this quick and flavorful Pad Kee Mao (Drunken Noodles) recipe! Made with rice noodles, tender chicken thigh, and crisp green veggies, this dish is bursting with bold flavors. With our simple cooking tips, you can whip up these spicy, aromatic Thai noodles in just 20 minutes! The combination of soft chicken, fragrant basil, fiery chilies, and chewy noodles makes this a must-try dish.

 



Ingredients:
- 250 g Chicken thigh Boneless skinless chicken thigh/breast
- 100 g dried rice noodles (or fresh rice noodles 250-300 g)
- 3 stalk Chinese Broccoli or Pak Choy/ Bok Choy/ Tenderstem Broccoli
- 2 cloves Garlic finely chopped
- 1 Shallot finely chopped
- 3-4 Bird Eye Chilli or any hot chilli (adjust to taste)
- 1 red Chilli Pepper or red bell pepper
- 2-3 tbsp Vegetable oil Oor neutral flavour oil

For the Sauce:
- 2 tbsp Light soy sauce
- 3 tbsp Oyster sauce
- 2 tsp Dark soy sauce
- 1 tbsp Fish sauce
- 1 tbsp Sugar

π™„π™£π™¨π™žπ™™π™šπ™§ π™π™žπ™₯ : Don’t Overcook the Noodles – Keep them slightly firm, as they will continue to cook while stir-frying. Overcooked noodles can become too soft and break apart, affecting both texture and appearance.

Spice It Up! – The signature heat is what makes Pad Kee Mao special. Use Thai chili peppers for that authentic fiery kick, or adjust the spice level to suit your taste. If you're new to spicy stir-fries, start small and build up the heat gradually.
