KHAO PAD

Thailand's to-go comfort food

 

An essential and versatile dish of Thai cuisine is Khao Pad (Thai fried rice) - the ultimate anytime meal - though it’s especially popular at lunchtime. This flavorful dish is made fresh to order with your choice of protein - chicken, pork, beef, seafood, or tofu—stir-fried with fragrant jasmine rice, eggs, onions, garlic, fish sauce, fresh herbs, and vegetables like tomatoes.

Each plate is served with crisp cucumber slices, lime wedges, and traditional Thai condiments, allowing you to adjust the flavors to your liking. Whether you prefer it mild or fiery hot, you’re in control - making Khao Pad a perfect choice for both spice lovers and those looking for something milder.

 


INGREDIENTS (can vary to your liking):

  • 2-3 cup Jasmine rice, cold (About 1/2 cup dry rice per person)
  • 2-3 Garlic cloves, crushed
  • 2 Spring/Green Onions, thinly sliced (save some for garnish)
  • 2-3 tbsp Fish sauce
  • 2 Eggs, whisked
  • 1 Carrot, julienned or diced
  • 1 Tomato, cut into 8 pieces
  • 150-200 g Protein of choice or Tofu, cut in cubes
  • 1 Thai chili, chopped/sliced
  • 1 tbsp Oyster sauce
  • 1 tsp Chili sauce or Chili garlic sauce


Side dishes:

  • Lime cloves
  • chopped Cilantro
  • sliced Cucumber

 

COOKING INSTRUCTIONS

  1. Add the sauce ingredients fish sauce, light soy sauce in a small bowl. Whisk it well.
  2. Heat the large wok or pan over medium heat, drizzle 2 tbsp of oil and stir fry the shallots and garlic for a few seconds until fragrant. Add the protein or tofu and cook until almost right .
  3. Then, push the protein to one side of the wok, drizzle 1 tbsp of oil and add 2 eggs inside the wok. Let it set for a few seconds then break them into small pieces. Add chillies and sprinkle salt and pepper to taste.
  4. Next, add the cooked rice and pour the sauce mixture over the rice. Bring the heat to a high and stir fry for about 2 mins or until the sauce is combined well with the rest of the ingredients.
  5. Add spring onions, toss everything well for another 1-2 mins. Transfer to a serving plate and garnish with, cucumber, lime wedges.
