Moo Gratiem

 

 

Moo Gratiem (π™π™π™–π™ž π™‚π™–π™§π™‘π™žπ™˜ π™‹π™šπ™₯π™₯π™šπ™§ 𝙋𝙀𝙧𝙠) is a simple and flavorful stir-fry that comes together in just 15 minutes. The pork is cooked with a fragrant garlic-pepper sauce, making it a great choice for a quick and easy meal. It’s best served with steamed jasmine rice or sticky rice.

This dish is also very versatile. In Thailand, it’s often made with different proteins like chicken, beef, shrimp, or squid, so you can easily adjust it to your preference.

INGREDIENTS:

  • 300g pork, sliced
  • 3 coriander roots
  • 10 cloves of garlic, chopped
  • 1 tsp pork stock
  • 1 tsp pepper
  • 1 tsp sugar
  • 1 tbsp oyster sauce
  • 1 tsp soy sauce

 

 

 

COOKING INSTRUCTIONS

  1. Smash the garlic and coriander roots in a pestle and mortar, then add the soy sauce, oyster sauce, pepper and stock.

  2. Add this mix to the pork and combine well. Then let the pork rest for 20 minutes.

  3. Heat a little oil in a wok and throw in the pork mix and sugar. Stir fry until the pork is cooked.

  4. Fry the pork in batches so as to not crowd the pot. Once you drop the pork immediately pull the pieces apart so they are not stuck together. Fry for about 45 seconds to 1 minute only, just until the exterior has browned slightly. Remove with a slotted skimmer and drain on paper towel. 

  5. To serve, sprinkle fried garlic over pork and top with cilantro leaves if desired
