Gai Pad med Mamuang Himmapan

 

Thai Cashew Chicken is a mouthwatering blend of spicy and sweet stir-fried chicken paired with toasted cashews. This simple yet flavorful dish features lemongrass, fresh ginger, and garlic, along with fiery red chilies and onions. While many associate cashew chicken with Chinese cuisine, it indeed has its roots in China. Thai Chinese stir-fry eateries serve this dish with a delightful crunch, a savory taste, and a mix of caramelized onions and crispy cashews.

 

 

INGREDIENTS

  • 200 gram chicken breast, cut into cubes

  • 1 tbsp. all-purpose flour

  • 1/3 sunflower oil for frying

  • 4 garlic cloves crushed

  • 1/2 cup yellow onions stripes

  • 1/3 cup dry red chilies

  • 1/2 cup raw cashew nuts

  • 1/3 cup fresh long red chili pepper stripes

  • 1/3 cup fresh banana chili pepper stripes

  • 1/3 cup spring onions

  • For the seasoning sauce:

  • 1 tbsp. light soy sauce

  • 1/2 tbsp dark soy sauce

  • 1/2 tbsp oyster sauce

  • ground white pepper

  • pinch of salt

  • pinch of sugar

  • 3 tbsp stock or water

 

COOKING INSTRUCTIONS

  1. Marinate the chicken: Mix in soy sauce, salt and cornflour (cornstarch) in the chicken. 
    Prep the ingredients. In stir frying it is very important that everything is prepped in advance as it all happens very fast. Cut the veggies, whisk the sauce and have everything by your side.
  2. Fry the chicken: On high heat, pan-fry the chicken and remove when it is cooked and golden. 
  3. Cook the vegetables: In the same pan, add the aromatics and sauté till they release their aroma
  4. Combine everything: Add the fried chicken and sauce to the pan. Let the sauce bubble on low heat and then turn off heat.
  5. Garnish: Toss in the spring onion and cashews. Garnish with sliced red chili and serve this Thai Cashew Nut Chicken with jasmine rice.

 

π™„π™£π™¨π™žπ™™π™šπ™§ π™π™žπ™₯ : Marinating the chicken at least 30 minutes (or better overnight) enriches its flavor both inside and out. Although the marinade is rich in taste, it mostly covers the surface. For optimal results, make sure the chicken is also seasoned internally.
